The fundamental differential equations of moisture and heat transport in a brown rice kernel were numerically analyzed during drying process. It was found that the calculated temperature of the brown rice kernel agreed well with experimental results. Changes of moisture distributions in a brown rice kernel were calculated during drying and preserving processes.
