The results obtained were summarized as follows: (1) It could be considered that the mass transfer resistance in air flow was negligibly small as compared with that in the rice kernel, so that the moisture content on the surface of the kernel reached an equilibrium value with the drying condition. (2) It could be assumed that the mechanism of moisture movement was given by a diffusion model based on the gradient of the moisture content in the kernel. (3) It was shown that the effective diffusivity of the moisture in the kernel could be estimated by observing the drying curve and measuring the dimensions (length, width and thickness) of the kernel, and that an equivalent radius of the kernel could be also determined by the above experimental results., 玄米の乾燥における輸送現象を追究するため基礎的実験を行い,次の結果を得た。 (1) 空気流の物質移動抵抗は米粒内部の抵抗に比べて無視小であり,したがって粒表面の含水率は乾燥条件における平衡値になると考えることができる。 (2)水分移動機構は粒内の含水率勾配に基づく拡散モデルで表現されるとみなせる。 (3) 乾燥曲線と粒の寸法(長さ,幅および厚さ)より粒の有効拡散係数が求まり,またそれらの測定値より粒の相当半径が決定されることを示した。, Article, 富山大学工学部紀要,37}, pages = {19--26}, title = {玄米の乾燥における輸送現象(1) : 実験的研究}, volume = {37}, year = {1986} }
